My Curried Zucchini Apple Bisque recipe

This was the first soup I ever made for my wife. She liked it so much she asked me to make it for our wedding. I try to make it at least once a year, usually in the Fall.


Curried Zucchini Apple Bisque
Ingredient Amount Preparation / Method Notes
Zucchini 3 Cups Chopped Remove the ends, but do not peel
Green (tart) Apples 2 Large Chopped, cores removed Do not peel
Onion 1 Medium Peeled & chopped Yellow (Spanish) work fine
Chicken Stock 4 Cups Homemade is best, or use canned An easy Chicken Stock recipe from Epicurious
Butter 2 Tablespoons   Unsalted please!
Ginger ½ Tablespoon Peeled & grated Mince very fine if you don't have a grater
Curry powder ½ Tablespoon   Adjust the amount to your liking, avoid the Hot variety
Salt & pepper To taste    
Scallions 1 bunch Sliced thin (julienne) Optional; for garnish
Sour Cream     Optional, but recommended; for garnish
 
A bowl of Soup
  1. Chop all of the vegetables (the hard part is now done).
  2. Over medium heat, melt the butter in a soup pot, and add the apples, zucchini, onion and curry powder. Saute until the onion is tender, about 10 minutes.
  3. Stir in the stock and grated ginger, bring to a boil.
  4. Reduce heat and simmer until the rest of the vegetables are very tender, about 20-25 minutes.
  5. Puree in a blender (a food processor doesn't get it as smooth), adjusting with more or less of the stock depending on how thick you like it. Return to low heat, and adjust the seasoning with salt & pepper, or even more curry powder if you like.
  6. Serve with a dollap of sour cream, and sprinkle with scallions.


Fantasy Hockey

I've been playing fantasy hockey for a few seasons now, last season I even managed to finish in 1st place. Based on the rankings of most of my players, I might have a tougher time doing as well this season.

And now for something completely different...

Bean on his four-wheelerFor our son's birthday in August, his Grandfather gave him a Power Wheels® four-wheeler. My wife and I were a bit concerned that he might be a little young for it, but he took to it very quickly. In fact, he rides it all the time now. Pretty soon he'll be ready for his first car.
